New Year’s Resolution #2 – Take Lunch to Work – Rice Balls

Another realistic, food-oriented resolution to start off 2010 — and what better to follow Eat Breakfast Everyday than Take Lunch to Work?

I’m not talking about everyday — I’m just not that absolute of a person. What fun is life if you don’t indulge in some fast pseudo-food once in awhile? But it’s totally doable to take your lunch 2 or 3 days a week, right? Save money, eat real food, and most likely lose a little weight, or at least slow down the clogging of your arteries.

Most of us can make a decent sandwich — a good sandwich makes a good lunch. However, it’s easy to fall into sandwich hell. Sandwich after sandwich, day after bleary day stretching to oblivion, eventually leading to the dissolution of the resolution. I’ve seen it happen. It breaks my heart.

Don’t let it happen to you. There’s options. Soup, leftovers, rice balls. Yup, rice balls. I found this nifty little mould in town last month, and I think it makes the sexiest gluten-free lunch I’ve seen. If you don’t have a nifty (or any other type) rice ball mould, you can follow these instructions to make them by hand.

My first go at rice balls had me using leftover edamame, chicken and peanut sauce. A little filling goes a long way, so don’t go crazy here…top it up with rice, unmould, and wrap in nori if you’ve got it.
